Meal 1
Cook the chicken in the way you like it (I use my electric frypan). Serve with vegetables--broccoli, cauliflower, carrots etc., or a mix. You could also throw everything in a slow cooker for a couple of hours on high.
Meal 2
Use leftover chicken if you have it (I usually do because I live alone) or use another chicken piece. Throw it in a skillet or wok with a stir fry vegie mix (I like a Mandarin or Asian mix). You can also stir in a stir fry sauce or Kraft (R) mandarin orange dressing.
Meal 3
Also good with leftover chicken. Make a sandwich using chicken, lettuce, tomato, and onion (I like to fry my onions).
Choice of sauces: BBQ, hot sauce, salsa.
Spread focaccia or 100% whole wheat bread with guacamole, mayo, mustard, or relish or use to top chicken.

Lunch suggestion
I made a fantastic salmon fillet sandwich for lunch! Grilled the salmon, drizzled teriyaki sauce over top and served in a soft Italian bun with lettuce and cucumber.
